What are you doing this weekend? I am working (as usual) but also taking a cooking class.
This week, I received a new assignment for a school seminar: To track my eating over the next few weeks and to make some positive changes. I'm wavering between drastic (no meat products) and baby steps (no simplified carbs and white sugar). Which way to go?
Part of our seminar discussion focused on mindful eating. Despite its old roots, mindful eating in American media experienced a little wave this month. Below are some links you may find interesting. One is not so recent, and many seem geared toward weight loss, which isn't the primary goal of mindful eating. But I am happy to see the topic attracting attention (even despite possibly ulterior motives).

Miniature Apple Pies
Mini apple pies are arguably even more delicious than a large slice. You get more crust per bite, while not losing any of the apple flavor. To make these, just take a recipe for a full-sized double crust apple pie and divide it among twelve muffin tins. Cut out dough circles measuring about four inches wide. Add a real or faux lattice top. Bake for half the time you would bake a large pie, until the pies are golden brown. Use a knife to slide the pies out of the tin and let cool. Then ENJOY.
